The Hot Dog King Of Las Vegas Makes His Way To Citizens Food Hall In New York City


Acclaimed chef, Ralph Perrazzo, brought his beloved hot dog brand Snap-O-Razzo, which can be found in sports stadiums and supermarkets across the country, to New York City in brick and mortar form for the first time with opening of Frankly by Snap-O-Razzo inside CITIZENS Manhattan West this month.

Originally from New York, Perrazzo worked in restaurants and attended the Culinary Institute of America in Hyde Park. Some time after graduating with his associates degree, he made his way to Las Vegas where his hot dog brand Snap-O-Razzo was born, featuring two types of quality lamb-cased hot dogs and four types of skinless hot dogs for commercial, retail, and e-commerce sales across the country.

Inspired by his grandmother’s Italian sausages growing up, Perrazzo began making homemade Italian sausages as a teenager. During his time in culinary school, he became obsessed with experimenting with emulsified meats, fat ratios, and flavor profiles. He says a driving force in his quest to create the perfect crispy, plump, and juicy hot dog is the nostalgia of the New York City’s kosher delis of his childhood. Containing no MSG, fillers, or additives, Perrazzo’s hot dogs have the quintessential “snap” that makes for an ideal hot dog experience elevating the beloved barbecue fare.

His latest concept Frankly by Snap-O-Razzo joins the likes of Umami Burger, Cicci Di Carne, Cindy Lou’s Cookies, Krispy Rice, and Plant Nation at C3’s CITIZENS food hall. On the menu, hot dog lovers will find classics like Ralphie’s Favorite Dog, a Chili Cheese Dog, Chicago-ish Dog, Corn Dog, and a vegan friendly Pickle Corn Dog.

Those who want something a bit more custom can opt for the “build your own dog” where they can choose from 7.5” Beef and Pork Hot Dogs and Snap-O-Razzo’s famed Jalapeno Pork Hot Dog combined with garnish options such as neon relish, sauerkraut, Ralphie’s hot dog sauce, sliced tomatoes, sport peppers, Snap-O-Razzo cold-cured garlic and onion baby dill pickles, and Snap-O-Razzo hot dog seasoning.

Perrazzo also crafted his own hot dog sauce that pays homage to the fan favorite old-school New York onion sauce originally created by Alan Geisler. Perrazzo’s version proudly stays true to the original flavor profile of the red onion sauce when first created. Crispy, cold-cured garlic and onion baby dill pickles are also on his roster of simple foods made right, along with a special blend of hot dog seasoning to top off your dogs, and a coarse blend to add to simmering water for dirty water dogs.
